Notes - Amaneko Spark is a spin off from the regular Amaneko Sake and is an active cloudy unpasteurized sake that undergoes secondary fermentation in the bottle. This sake was also fermented in a wooden tub. Sparkling sensation popping in the mouth with residue of 🍚. Gentle aroma and sweetness of pear with a sour calpis water aftertaste. This is brewed using white koji (Shochu Koji) on top of regular sake koji and white koji produces a lot of critic acid which explains the sourness. The finishing is crisp and very sharp.

This was the pre dinner bottle at @izakayaniningashi as a bottle of sparkling always have the magic to start the night in the right direction. Food pairing was with some starters such as shark cartilage seasoned with plum sauce, smoked appetizer consisting of duck, iburigakka cheese, mackerel, and cabbage 🥗 with miso mayo. This sake makes perfect combination with the shark cartilage as it reduces the saltiness from the plum sauce and adding balance to an otherwise overly salty dish. It also goes really well with the smoked appetizer as the sparkling sensation of the sake when mixed with the smokiness of the dish created another whole new level of umami. This sake is also a good substitute to champagne as it definitely has more depth.
