Notes - Picked a bottle of Atagonomatsu Tokubetsu Junmai Shinshu last night during dinner at @kamoshita5neilroad. Headed by a female Toji, the goal of Niizawa brewery is to create the “ultimate food sake” to enhance the deliciousness of food. Niizawa brewery uses “diamond roll” polishing machines to achieve the world’s highest polishing rate of 0.85% and also introduce a flat polishing machine that efficiently removes components that cause unwanted flavors and preserves the umami of the 🌾. Other brands produced by Niizawa included Hakurakusei 伯楽星。This sake is light and refreshing in the mouth with aromatic fragrance of freshly cooked 🍚. Medium acidity with some tartness as it goes down the palate awakening the throat for more.

Food pairing was with the amazing 🍢 and appetizers from Kamoshita and the service was superb as usual. The 🍢 that they served are vastly different from those usual ones where you get about 6-7 different pieces in a bowl of dashi stock. They served each piece on its own with its own unique toppings. As a Shinshu 新酒 Tokubetsu Junmai, it packs a wild and robust texture with a crisp aftertaste that is especially great with cheese dishes such as iburigakko with cream cheese. It also makes good combination with the uniquely curated 🍢 by adding that little tartness and acidity.

Overall, this is a good sake. 😀 😃
