Notes - As there is an one and only Dassai bar at @ukaiteikaohsiung in Kaohsiung, 🇹🇼, I definitely have to try some interesting Dassai exclusively to the bar. First up will be the 2nd highest priced bottle on the menu which is also the 2nd bottle for my dinner, Dassai 獺祭 美酔。I was told the story behind this bottle was that Dassai was trying to reduce the alcohol content for good sake and have been experimenting for the past 20 years without having produce anything satisfactory until Nagao San, the crafting manager, found a way by controlling the initial fermenting temperature more delicately and ferment for around 35 days to produce 美酔 with an alcohol content of less than 12% without the need to add any water. The end result is a light and airy 🍶 with lots of ginjo characters and tons of fruity fragrance dancing in the mouth. Low acidity and medium sweetness envelopes the palate after every sip.

Pairing was still with the teppanyaki food @ukaiteikaohsiung which consist of deep fried 🐟 with a bolognese sauce and pan fried 🐟 with fresh abalone 🍄 with a 🐓 stock reduction. With the light 🍶, it doesn’t overpower the dishes but provide a unique sweetness aftertaste and also help to ready the palate for the next bite. Definitely needs to be enjoyed chilled for maximum experience.

Overall, this is an excellent sake. 🎊 🎊 🎊
