Notes - Season 2 of this prolific collaboration among 7 distinct breweries from Miyagi Prefecture sees the introduction of Urakasumi. These 7 breweries came together in the midst of their reconstruction efforts after the great Tohoku earthquake in 2011. As with previous editions, each of the 7 breweries have a specific role to play in the brewing process.

In this Urakasumi style 🍶. Urakasumi house yeast, Kyokai no.12 takes center stage in this elegant brew. Robust and clean in the mouth yet with complex structure. It displays gentle aromatic ginjo notes and accompanied with a slight grapefruit sourness together with a well balanced acidity that can be enjoyed with every sip.

Food pairing was with sashimi donburi, sashimi moriawase and kurobuta pork with kimchi. With a slight sourness, the sake really goes very well with the fresh sashimi and further enhancing the freshness of the 🐟. It also pairs well with the kimchi pork by adding another layer of texture to the dish. This is a limited edition sake and highly recommended to try as it is not always easy to come across a sake that is a collaboration among different breweries.
