Overall - This sake is brewed with a mixture of Yamadanishiki and Gohyakumangoku 🌾 and pure snowmelt mountain stream water known as Raiden-sama no Mizu (Water of the god Raiden). Fruity aroma of 🍌,🍈 with a slight touch of steam 🍚. Polished to 45%, the taste is light and compliments the light body. The sake is also smooth and clean with medium umami. Being a Niigata style sake, this sake is on the medium dry side with medium finishing. Being light and having medium umami, this sake can be paired with lots of different food. I paired it with thinly sliced wagyu carpaccio. The level of umami tends to bring out and elevate the sweetness of the raw beef and the light body balances the mayonnaise sauce. This sake can also be paired with Yakitori sticks or unagi-don as both dishes are stronger in flavor. Best to savor the sake chill at around 12C.
