Overall - One of my all time favorite 🍶. Was being introduced to this 🍶about 5 years ago and back then I do not know anything about 🍶 just that I like the taste of this particular one. Yukimuro is a ❄️ storage facility whereby snow is stored and is used as a natural refrigerator to keep food fresh during the summer time. The Yukimuro is usually divided into two side by side spaces; snow piled up on one side, and sake tanks and food items directly next to it. No electricity is used for Yukimuro storage and the natural cold air coming off of the snow alone is what does the chilling of this 🍶. Although aged for 3 years in snow, this is not your regular Koshu 古酒 and it definitely do not taste anything like a typical Koshu. Made from 1 of the top 2 sake 🌾, Gohyakumangoku, and polished till 50%, the aroma of this 🍶 is a mixture of snow 🍐, 🍈 and flowers with a hint of freshly steam 🍚. With a medium body and a light umami, it makes it easy to pair with most food. I had it chilled and paired it with Italian cold cut which consists of different types of hams and 🫒 . Being medium body with a medium length, it didn’t overpower the strong flavor of the hams and 🫒. And as the 🍶 is medium sweet, it also balances the saltiness of the food.
Overall this is a very good 🍶.
