Notes - This brewery was founded 200 years ago and is helmed by the 9th generation owner, Kenji Hiroki, currently. Almost facing bankruptcy many years ago, Kenji Hiroki san launched the Hiroki brand of sake which not just save the brewery from bankruptcy and also gain cult-status sake amongst sake connoisseurs.

Voluptuous and rounded on the palate with a smooth ending. Refreshing ginjo notes of fresh 🍑 and marshmallow on the nose with complex concentration. Food pairing was with the 🍣 Omakase at Sushi Kyuu by Shunsui. This sake makes amazing combination with the instant smoke salmon as it balances the smokiness and creates an entirely different texture to the dish. It also pairs well with those white fish 🍣 by enhancing the freshness and adds another level of sweetness to the fish. Other food pairing will be Sudachi Sōmen as it will balance the sourness and create a refreshing finish to the dish.

Overall, this is an excellent sake. 🎊 🎊
