Notes - Despite having visited Izumibashi Shuzo in Feb 2023, I haven’t really given a review of their 🍶 which has been a long overdue project of mine until recently that I could get my hands on a bottle of their Junmai Ginjo which is currently served in the business class flights of Singapore Airlines. Izumibashi was founded in 1857 and has been growing 🌾 mainly for food since before the war. In 2016, they became a cultivation brewery where they grow, harvest and polish their own 🌾 used for their brewing.
Brewed with the king of 🍶 🌾, Yamadanishiki, the taste is smooth and rounded in the mouth with exploding ginjo fragrance of fruits. Elegant and well balance on the tongue and finishing off with a slight bitter aftertaste.
This 🍶 was enjoyed over dinner @thegyubar.sg where we decided to go for their appetizers and shabu shabu. Their shabu shabu soup base was made using konbu and fresh Napa Cabbage (大白🥬) was added to enhance the sweetness of the soup base. The beef cuts are nothing but wagyu which is the signature of the restaurant. The 🍶 pairs well with the light tasting shabu shabu and goes really well with the wagyu beef by adding a deeper natural juiciness to the meat. Despite ordering 1 bottle just for myself, it is easy enough to finish the bottle without any help needed. A very elegant 🍶 that you can taste the hard work behind the brewing process. Excellent job indeed by Izumibashi. 👍 👍 👍
