Kaze No Mori Alpha

A beautiful line up of Kaze No Mori’s Alpha range. Yoshi-san shared that he tries to do something different for each Alpha in the series.

My favourite of the bunch is Alpha 8 made out of brown rice. The flavours are amazing and one of a kind. You can taste the bran, the roast - flavours I’ve never experienced from a sake bottle.

I also enjoyed Alpha 4 very much, which was created without any pressing apparatus. Instead they use a “sleep separation” technique called hyoketsudori to separate the sake from the lees (solids). You can see remnants of the rice when you pour this into your glass, but it is by no means a Nigori.
