Opened my very special bottle of Alpha 8. This is made of brown rice, completely unpolished, hence the name “Power of the Ground”. I’ve never tasted sake like this before and I like that they are not afraid to push boundaries. A slight sourness & umami initially, followed by strong notes of roasted rice and bran. A nice fizzle from the Nama to top it all off. I love the roasted notes and this is my favourite bottle from the Alpha range so far.
