Overall - Was at Boruto for dinner and they have $10 per glass sake and I decided to give Komaizumi a try as it was brewed with Hanafubuki 🌾 which is rather unique. Hanafubuki 🌾 is a cold climate sake rice originating from Aomori in Northern Japan. It has one of the largest rice grains that exist and with modest shinpaku levels. Polished to 60%, this Ginjo grade sake is largely evident of 🍌, soy sauce and steam 🍚 aroma. Despite being light in taste, it packs a medium body with medium umami. Not too overwhelming on the palate. Being medium dry and with a medium tail, this sake can be paired with a large variety of food, from the light tasting dishes like sashimi salad, Japanese 🍢 to medium flavored dishes like oyster omelette or Char Kway Tiao. Since I’m at Boruto, I paired it with their 10/10 special dish which is Japanese raw wagyu with caviar. The umami of the sake really enhance the overall flavor of the dish especially when drinking it with the caviar. I also did some research on why this sake was name after the Saba 🐟 and found out that this sake is good to be drank while eating grilled Saba.
Overall, this is a good sake.
