Notes - Brewed using Masumi No.7 Kobo with an extremely rare 🌾 Kinmon Nishiki (also known as the dreamy brewery 🌾) which is only allowed to be produced in the Kijimadaira village located in north part of Nagano, this 🍶 is complex and yet elegant in the mouth with notes of dry apricots on the tip of the tongue. Medium and a clear expanding umami can be felt the longer the 🍶 stays in the mouth. A gentle sweetness can be felt lingering at the back of the throat after every sip and slowly dissolves into a slight bitterness. Although a Yamahai style but it still maintains the delicate texture of a typical Junmai Daiginjo which is likely attributed to the Masumi No.7 Kobo.

This was paired with home cooked fried pork 🥟 which I felt it was really good pairing as the level of umaminess coupled with the natural juices from the pork really makes the overall taste very heavenly and makes me salivate with every sip. Also the umaminess deepens as the temperature of the 🍶 slowly increases which truly displays the amazing sake brewing skills of Masumi. Not forgetting to mention, this is a GI Nagano 🍶.

Masumi is one of the 🍶 brand which I very much enjoy as they have a wide range of selections which can cater to every level of 🍶 enthusiasts.
