Overall - Decide to give this sake a try during a dinner at Senryo based on the recommendation by the in-house sommelier. A Junmai Ginjo made with 💯% Yamadanishiki 🌾 which display a generous amount of fruity aroma consisting of 🍈, 🍐 and even🍍 which I have never encounter before in other sakes that I have tried.
With medium characteristics in the body and taste, it also has a medium umami to compliment the texture. With a medium length, you will find a touch of acidity at the beginning but soon disappear into a slightly sweet aftertaste. Not too overwhelming and yet easy enough to enjoy at a weekday dinner. This sake is served chilled using an ice sake dispenser in order to maintain the temperature. Something that most restaurants do not do except putting the sake bottle in an ice bucket.
Food pairing was easy with the fare at Senryo which consists of sear wagyu salad, assorted yakitori and fresh sashimi. The sake goes really well with almost all the dishes especially the yakitori as it helps to remove the oily feeling as well as dilute the otherwise a little heavy yakitori sauce. Other food which I will suggest pairing is with a good charcuterie board which must consist of spicy chorizo and strong flavor cheeses. Somehow I feel the umami from the sake will elevate the cheeses to another level. Lovely bottle that can be enjoyed by all levels of sake drinkers and easy to pair with most food.
Overall, this is a very good sake. ☺️
