Notes - This is a regular Mutsu Hassan Sake 🍶, the Tokubetsu Junmai “Red Label.” In order to qualify as a Tokubetsu Junmai, it has to be made with 🌾 that is polished to less than 60% of its original weight and must not be fortified with any distilled alcohol. This 🍶 is clean and crisp in the mouth with a refreshing body. Low acidity and coupled with a dry bitterness that lingers for quite some time in the throat. Full of complexity and vibrancy that is typical of a Tokubetsu Junmai but displaying fruity characteristics of a Ginjo-Shu.

I enjoyed this 🍶 with appetizers consisting of home grilled tatami iwashi and ei-hire and then finishing off with sashimi. This is a good 🍶 to pair with such appetizers due to the drier texture and its ability to reset the palate. This is much needed as both the appetizers are preserved and on the saltier taste.

Although not much of a 🍚 flavor that one might expect from this Tokubetsu Junmai nevertheless, it’s still full of depth and complexity which is the reason that I’ll always choose a Tokubetsu 🍶 over a ginjo. 💥 💥 💥
