Notes - At Fukuchiyo Shuzo, their goal is to make sake that is loved by everyone including myself as I have always enjoy Nabeshima sakes. Brewed with 💯 top grade Akaiwa Omachi 🌾 which is otherwise known as “Phantom” or ancestor of Yamadanishiki 🌾. This Tokubetsu Junmai is zesty and orangey in the mouth with medium acidity and a slight lemon sour finish. As mentioned in my other posts, I tend to have an unique liking for Tokubetsu type of sakes as they always managed to surprise me in terms of aroma and taste.

This bottle was enjoyed over Omakase dinner at 1 of my favorite place @kyuubyshunsui_official. The GM, Mr. Simon, never fails to introduce or recommend nice sakes for my dinner. With the zesty lemon sour taste, it goes really well with the sashimi and Ikura rice as it adds another level of freshness to the fish. I am not a fan of Ikura as I always felt that it has a fishy taste if taken in great amount like in the case of this 🍚 with overflowing ikura. I am glad the sake helps to reduce the fishy aftertaste of the Ikura and making it more mellow and enjoyable. 👍 for yet another bottle of Nabeshima.

Overall, this is an excellent sake which food pairing can be extended beyond Japanese cuisine. 😊 😊 😊
