Overall - Shichiken is brewed with locally grown 🌾 from Hokuto and is a collaboration between the farmers and brewers whereby the brewers also participate in 🌾 farming. Fresh sparkling citrus soury taste with a slight grapefruit bitterness. Low acidity and smooth and clean on the swallow. This sparkling sake is secondary fermented in the bottle therefore the bubbles are gentle and there is a pleasant Ginjo aroma. This Yamano Kasumi was first launched in 2015 and paved the way for other award winning sparkling sakes ever since. It has also won various awards in the sparkling category from IWC Sake from 2017-2020.

This sake serve as my first drink at the Omakase dinner at Ishizuka, Melbourne. My first overseas holiday since Covid in 2020. It pairs really well with the Sakizuke which consist of marron bisque with spammer crab and also the Zensai which consists of different light tasting seafood and sushi. The sourish taste of the sake really opens up the appetite for more food and goes really well with raw seafood by adding a touch of citrus flavor. Have never really gone into sparkling sake as a pre drink and I must say this is as good as any brut as a starter. Perhaps even more in depth in flavor than the regular brut.
