Overall - A bottle of Tatenokawa 中取. 中取laterally means middle pick in English. It is the medium part that comes out when pressing the mesh. It is supposed to be the part with the best balance of aroma and taste. Full of fruity fragrance and yet with a hint of lemon sour when first nose. This sake has a grapefruit like taste at the swallow and a bitter aftertaste that lingers at the back of the throat. Also slightly sour and refreshing taste of a citrus fruit.
I would suggest drinking chilled and pairing with lightly seasoned seafood or freshly sliced sashimi or oyster as the slightly sour taste from the sake will act as a seafood enhancer to bring the freshness to another level. This sake is also good to go with appetizers like Japanese cold tofu with dashi sauce or even Somen (素面). Nice to drink in a hot country like Singapore where it will make you feel refresh after a day’s work. This sake can also be enjoyed at Nurukan (40c) temperature. When warmed, the sake becomes rounder and drier but with a lesser bitter aftertaste. The aroma of steam 🍚 is also more evident. I would pair it with tonjiru soup or ginseng chicken soup so as to enhance the flavor of the soup. Best to savor using a clay/earthen ochoko.
