Notes - Tedorigawa Yoshida Shuzoten was founded in 1870 in Yamashima Village and is located near Tedorigawa River and Mount Hakusan. Since 1997, the brewery has 2 Kuras (Tedorigawa & Yoshidagura) and led by 2 Tojis. Both Tojis put a lot of effort into Yamahai method and aged 🍶, which is reminiscent of traditional “Yamashima Sake”.

Tedorigawa 🍶 has always been my go to whenever I need a Yamahai 🍶. I have to admit that they are really good with using the Yamahai method to produce extremely good 🍶 with lots of flavors and depths. This 🍶 is brewed with Ishikawamon 🌾 which is only limited to Ishikawa Prefecture through contract farming.

The bottle opened with a soft pop and some 🫧 could be seen when the 🍶 is being poured into the glass. Full and well balanced in the mouth with some stickiness enveloping the inner cheeks. Mineral aroma can be felt as you continue sipping on this elegant liquid. As it slides down the throat, it leaves behind a slight off bitterness which helps to balance the sweet flavor. Good to pair with grilled food or medium to heavy flavored food to complement the body of the 🍶.
