Overall - The name Tensei 天青 is taken from the Chinese word “雨过天青云破处”. This is a limited March Asahi Shibori which also means pressing of the sake in the morning of March. This is thought to be the freshest sake that one can enjoy as it is pressed in the morning, bottled and shipped for sale within the same day. It is also not filtered, pasteurized or watered down and is presented in its raw form which makes this sake a little bubbly when opened. Simple and clean at the mouth with a dry and crisp aftertaste that lingers for quite a bit. Mild bitterness due to the medium acidity and full of complexity when swallow.

This is the 2nd bottle of the night at the Omakase dinner at Rockon Singapore. As a medium body sake, it makes the dishes of crab croquette, sous vide beef with roasted purple sweet potato stand out by enhancing the flavor of the dishes and adding another level of luscious aroma to them. This bottle will go well with meat and deep fried dishes. Suggested as a 2nd bottle for an extended dinner anytime. Needs to be served and drank chilled in order to maintain the freshness of the sake.
