Yuki no Bosha 雪の茅舎 純米大吟醸 Junmai Daiginjo 45% Seimai Buai

Rice - Hyogo Yamadanishiki 山田锦 🌾
Prefecture - Akita 秋田縣
Brewery - Saiya Shuzoten 齋彌酒造店
Alcohol - 16%
Color - Colorless
Aroma - 🍏, 🍌, 🍐, grapefruit
Taste - Light
Umami - Light
First impression - Lively
Body - Medium
Sweetness - Medium
Tail/length - Medium
🍐 🍐 🍐 🍐
Notes - This is a mellow 🍶 made by polishing high quality Hyogo Yamadanishiki 🌾, using the yeast from its brewery and maturing it for a long time at a low temperature to maximize the flavor of the 🌾. Full and refreshing in the mouth with fruity 🍐 aroma bursting from within. Slight yuzu sourness with every sip. Medium high acidity that makes you quiche in the inner side of your cheeks with a lingering bitter dry aftertaste.

Highly recommended to pair with 🍖 or seafood dishes and hotpot. From a local 🇸🇬 food perspective, I’ll likely pair it with 🦪 omelette and 🦐 noodle soup.

Overall, this is an excellent 🍶 with lots of layers and complexity. 💫 💫 💫
