Notes - The Zaku Impression series was born out of a painstaking process of trial and error, to try and find a way to make a pasteurized sake which reproduces the characteristics aromas and flavors of a freshly pressed namazake. This bottle is the M Impression and “M” stands for “Megumi no Tomo”. Bursting with zesty 🍊 feeling in the mouth with a slight fizziness and with a lemon sour aftertaste lingering in the throat after every sip. This is a result of direct namazake bottling, meaning no pasteurization and straight into the bottle after pressing. As such it went through in bottle fermentation and produces a slight bubbling effect and forces all the aroma out once opened.

Food pairing was done @hanabi_25119358 where we savour some really nice Izakaya dishes consisting of 釜饭 (wild 🍄 truffle 🍚 and beef tendon 🍚), 🐓 karaage, grilled 🐟 collar and grilled beef short ribs. The refreshing zesty 🍶 really pairs very well with the grill meat and the 🐓 karaage by adding a touch of sourness to the dishes. It also helps remove the oily sensation in the mouth especially after all the grilled and fried food. Needs to be enjoyed chilled to maximize the taste and aroma of this 🍶.

Overall, Zaku Impression never fails to impress me. 😊 😊 😊
