Notes - At @niizawabrewery, it is all about creating the “ultimate food 🍶.” Hence they have a few brands like Hakurakusei, Atagonomatsu and also a premium line which Zankyo Super 7 falls under. In 2009, the first 🍶 with a single digit polishing ratio was released in 🇯🇵 by Niizawa Brewery and it evolved from 9% to 8% and then to 7% at present. The Zankyo Super 7 has also won Gold in the IWC 2022 Junmai Daiginjo category. Brewed with Kura no Hana 🌾 which was only developed in 1987, this 🍶 is light and delicate on the palate with lots of 🌸 note yet at the same time, soft and full of fruity aroma enveloping the whole mouth. Hints of roasted barley with low acidity and a grapefruit tartness and some bitterness down the throat. A mouth watering and mellow sensation with every sip.
Pairing was done with omakase dinner @fleuretterestaurant which is a 🇯🇵, 🇫🇷, 🇸🇬 fusion dining. A few call outs that went really well with the 🍶are the chilled somen noodles with ama ebi 🦐, chawanmushi with langoustine, scallop with ravioli and white asparagus with yuzu sabayon. This was the April menu as the restaurant prides itself with using fresh seasonal ingredients for their dishes. The light texture of the 🍶 pairs really well with fresh seafood and helps to elevate the sweetness to another level. The 🌸 note also enhances the dishes making you feel like it’s spring time although there is no 4 seasons in 🇸🇬.
A super excellent bottle that is worth indulging in. 😊 😊 😊
