Bruichladdich Infinity [3], Edition 3.10, 50% abv, 20 ppm.

The third edition of the Infinity series is a vat of varying Bruichladdich vintages matured in refill sherry and Ribero/tempranillo casks, or Syrah wine casks depending on who's talking, at the Port Charlotte warehouse. The interesting thing is that the refill sherry casks are made from Spanish grown Quercus Alba (bourbon cask). Also peated to 20 ppm, which is apparently the highest in the Infinity range.

Nose: initial smoke, sherry, a fruit juice bouquet. When my nose is up close I get intense peat, coastal notes. A few drops of water and I get floral and grassy notes.

Palate: In small amounts its basically honey and peat. More sizable sips are very peaty (only 20 ppm?!?!), sour, quite smooth, sweet spices on the backend. A few drops of water brings out the peat. Quite complex, reminds me of Port Ellen.

Finish: moderate, peaty, sweet, sour wood.

Haha, the bartender, now ex-bartender, was actually a hotelier with a background in wine (new to whisky)... he took a side sip and fell in love with this infinity edition 3. I also think it's an amazingly beautiful dram, the nose is an excellent collection of Islay peat and fruity sherry. It doesn't taste like a 50% abv whisky. It doesn't taste like 20 ppm peat level whisky either.
