Evermore 2001, 21 Year Old, Kirin-Seagram 40% ABV

Evermore 21yo, d.2001, Kirin-Seagram, No. 07772, 40% abv.

A blend from Kirin Fuji Gotemba distillery. I heard this is the result of a collaboration between Kirin-Seagrams and Chivas, thus the difference between this and their more standard product line. Drank this in 2020.

Nose: a little bit of vinegar, not fruity initially, cucumbers dipped in an oil and soy sauce mixture, turns to cherry popsicle, but still retains a strong sourness. Interesting aromas, smells more like a strong sauce than whisky.

Palate: light body, initial palate is a cool semi-sweet simple syrup, mid palate is just more light syrup, simple stuff, back palate has a little perfume in flavor and olfaction... which gets stronger, showcases some aged malt juice, seasoning oils, seasoned beef jerky, gets more dry with each sip.

Finish: medium, bitter, drying, slightly burnt food residue, hints of butter, more like the aftermath of eating a sweet bread, steel, metallic residue.

Very simple stuff. Didn't even taste like whisky at most points, more like a light juice. Sounds good and has a few decent elements, but after drinking it, it's more like food that yearns for more. Now that I think about it, it's also similar to a very light bodied oil-oriented cognac.
