Deep into the Fennel of Love

Been a while but I'm back with one of my favorite cocktails i've ever created. This drink was inspired by the super talented people behind Rye Remedy and their recipe for fennel water. I also wanted to get on board with the #cubesincoupes movement started by @thecocktail.blog

• 1.5 oz Gin (Ki No Bi Gin)
• 1 oz fennel "water"
• 3/4 oz Kummel
• 1 dash celery bitters

Stir over ice. Strain into a coup. Garnish with a fennel sprig.
This is my first time using Kummel in a cocktail and I'm in love. The caraway flavor is the perfect match for the fennel water which is more a light fennel syrup. The celery bitters add the bit of saltiness to balance out the sweetness.
