Back to back Banana cocktails. This one is not gonna be for everyone. Banana Daiquiris are already somewhat controversial. This is a funkier take on the beach bar classic that uses fermented banana and a bold Jamaican pot still rum. ⁣⁣

Kill the Tally Man, Eat the Bananas⁣⁣
⁣⁣
1.5 oz Smith and Cross⁣⁣
⁣⁣
1 oz coconut milk⁣⁣
⁣⁣
.5 oz brown sugar syrup⁣⁣
⁣⁣
fermented banana⁣⁣
⁣⁣
1 dash angostura bitters⁣⁣
⁣⁣
2 drops elemakule tiki bitters⁣⁣
⁣⁣
Blend all with crushed ice. ⁣⁣
Garnish with fresh banana and Vietnamese banana candy. ⁣

My girlfriend and I were just in Vietnam and picked up these awesome banana candies in the Mekong Delta city of Can Tho.Since then I've been tinkering with banana cocktail ideas.This was the most ambitious. ⁣⁣ ⁣⁣ I fermented the banana in water with cinnamon, brown sugar, salt, and a probiotic for around three days. The fermentation came out well. Theres still a strong banana smell and a bit of the usual banana flavor but it's slightly sour, funkier, and the texture is much softer. ⁣⁣

Smith and Cross is probably my favorite rum out there. It's a Navy strength, pot stilled, Jamaican rum thats funkier than Kool & the gang and will turn you into a slurring, possibly syphilitic pirate by your third drink, guaranteed. ⁣⁣

The rum is what led me to the name. Most people know the Harry Belefonte Calypso hit Day-O, the "banana boat song". If you don't recognize the name, you probably still know it by ear. ⁣The upbeat tempo of the traditional Jamaican dock workers song masks the anger and resentment towards a capitalist system that values money over the lives of its workforce.

Things you could add to this to make it even better: Giffard banane du bresil, chocolate, ice cream, maybe amaro Montenegro. Idk.
