This cocktail was invented in the 1880s and was literally meant to be drank in the morning as a “nerve quieter” according to ‘The Modern Bartenders Guide’ author O.H. Byron.

1/2oz FRESH LEMON JUICE
1/2oz FRESH LIME JUICE
1/2oz RICH SIMPLE SYRUP
3 drops ABSINTHE
SODA WATER
EGG WHITE

•Combine ingredients and dry shake
•Add large rock of ice and vigorously shake 30 seconds
•Double strain into collins glass
•Place drink in freezer while egg white settles
•Poke a hole in egg white foam and pour in soda
