Pie Hard with a Vengeance
- 45 ml black pepper, shiso, and strawberry infused Beefeater Gin
- 10 ml Rinomato Aperitivo Deciso
- 10 ml Lemon Juice
- 25 ml Homemade Strawberry Rhubarb Syrup
- 1 dash Rhubarb Bitters
- 1 small Egg White
Reverse dry shake and strain into a vanilla syrup and Lotus Biscoff biscuit rimmed glass I wanted to make a cocktail similar to a strawberry rhubarb pie and I think this is about as close as I can get.
I think I would omit the rhubarb bitters in favor of something else next time. They didn't really add much as the rinomato and syrup already had a strong rhubarb bitterness. I also might use less egg white next time.
Rinomato Aperitivo Deciso is a great Apertivo in a similar style as campari. It's slightly sweeter with the same bitter citrus flavor and a much lower ABV. Great to sip on the rocks or with soda and also fantastic in a negroni variation. Highly recommend it. Here the bitterness reinforced some of the rhubarb flavor.
For the gin infusion I slapped a few shiso leaves, toasted 10 black peppercorns, and halved a few fresh strawberries, leaves and all. then tossed em in a Mason jar, filled it with beefeater gin and let it sit for a few days, shaking occasionally. The gin on its own came out bomb, but the rhubarb in the syrup drowns out the subtler notes here so I think plain old gin would work just as well. Gonna try it in something more gin forward next.
