1 oz @bacardi 8 year rum⁣
⁣
.25 oz @cointreau
⁣
.5 oz maple cream liqueur⁣
⁣
.25 oz maple syrup⁣
⁣
4 oz strong @teapigs chai tea⁣
⁣
build in glass, stir, top with homemade vanilla whipped cream. ⁣

It's cold and rainy in Shanghai and everyone is holed up in their houses waiting for the coronavirus epidemic to pass. With nothing to do but binge watch Harry Potter movies and read books, I've run into a recurring beverage dilemma. Cup of tea or cocktail? Well, why not both? ⁣

This is a pretty standard spiked chai latte. The only real curveball here is that instead of milk, I've used maple cream liqueur from Quebec. It's basically maple syrup flavored Bailey's and it's delicious. ⁣

I also made vanilla whipped cream using the scrapings from the inside of a vanilla bean, caster sugar, and heavy cream. I'm out of practice with a piping bag though. My old head chefs would be disappointed. ⁣

As you'd expect, this drink was maple-y sweet and had the warm baking spices associated with chai and rum. The best part though, was the cloud of cool vanilla cream on top. I dumped the rest onto some Betty Crocker brownies. I might survive the coronavirus but I'm gonna be a few pounds heavier when it's all done. ⁣
