The Sidecar
60 ml @hennessy Cognac
22.5 ml @cointreau
22.5 lemon juice
5ml rich demerera syrup
Shake and double strain. garnish with expressed orange twist.
The Sidecar is one of the most iconic classic cocktails. There are numerous rumors about its origin. The most common involve a customer who arrived in the sidecar of a motorcycle, requesting the drink. I've often heard it was an officer in the French army during WWI who travelled from the front lines in a sidecar. Other legends claim the drink was invented in New Orleans and named because the remainder after shaking and straining was poured into a shot glass and served "on the side".
Whatever the origin, this recipe is likely a bit different from the original. I've taken a page out of Joaquín Simó's book and added a dash of rich demerara syrupin place of a sugar rim. The syrup helps balance the sour citrus and adds a slightly smoother, fuller texture to the drink. Its also a lot less sticky. Simó calls for Pierre Ferrand Cognac and Dry Curacao in his recipe but I'm not that classy.
