Cat Bite Club Hits Refresh on Menu: We Try New Cocktails Hulk Splash, 🥭🥔💥, Sippin' Shrooms & Ode to Ada


Rooted in agave and rice spirits, Cat Bite Club’s new cocktail menu continues the bar’s mission of educating guests and telling the story of each spirit’s origin by amplifying its unique character. 

This latest menu is the biggest change since Cat Bite Club opened its doors in mid-2023. The bar’s two core signature serves - the Cat Bite Margarita, with Código 1530 Blanco Tequila, Siete Misterios Espadín Mezcal, Cointreau, fresh citrus blend, agave nectar, Sherry (S$27++) and the Soju Sprint, with Tokki Soju, peach, honey, mint, fresh citrus blend, Sherry, Absinthe, soda (S$25++) remain as an introduction to the two main spirits categories. From there, each page features a classic reimagined through the lens of agave and rice spirits.

A lesser known classic, the Invisible Gin is a refreshing highball with Bombay Sapphire Gin, ginger, fresh pineapple, fresh citrus blend, Gentian, apricot and soda water (S$26++). Its agave spinoff, the Hulk Splashbrings savoury drinks to a new level with Ocho Blanco Tequila, kiwi, fresh citrus blend, Fernet Hunter Granit and roasted broccoli, carbonated (S$28++); the rice version, Return of the Mak, is built around the Korean rice wine, Makgeolli and Tokki Soju, with Amontillado Sherry, persimmon, hazelnut and fresh citrus blend (S$25++). 


Our Thoughts on the Hulk Smash:

Now this is how you'll get us to eat our vegetables! We love that the Brocolli is pan-fried before being sous vide infused in tequila, as this brings out a mild vegetal note and salinity that contrasted really well with the refreshing citrusy tartness of the kiwi! A great starter drink to kick off a night at Cat Bite Club.  


 

The popular Espresso Martini section features a new update for rice, with the 🍍️‍🔥 being replaced by 🥭🥔💥 with Imo Shochu, Veritas Rum, mango lime leaf codrial, Cointreau, fresh citrus blend, yoghurt and cold brew coffee (S$27++); this joins the beloved Meow Now Brown Cow as an agave variation with Espolon Añejo Tequila, Mr Black Coffee liqueur, banana cordial, vanilla cream, Sherry, aromatic bitters and salt (S$25++). 


Our Thoughts on 🥭🥔💥:

Served in an adorable Merlion-shaped Veritas rum cup, this tiki-style drink blends refreshing orange candy flavours with some dark cacao notes from the addition of cold brew coffee. Tastes like one is sipping on an orangette!


Another new classic, Little Italy, has been added with the traditional serve featuring Michter’s Rye Whiskey, Cynar, Cinzano Rosso 1757 Vermouth and Scrappy’s Orange Bitters (S$27++). The agave old fashioned-style Ode to Ada features Montelobos Espadín Joven Mezcal, Tepeztate Mezcal, Amari, apricot and Cinzano Rosso 1757 Vermouth (S$26++); the rice version, Sippin’ Shrooms, is served up with pisco, Hachi Kokuto, Shiitake-infused Sherry, Umeshu, sesame, Amaro and and celery bitters (S$27++). 


Our Thoughts on Sippin' Shrooms:

Really layered and complex, this one! The decision to fat wash the brown sugar hachi with sesame oil was a really smart one! It lent to the cocktail's silky mouthfeel and sweet nutty accents. We also got delicious notes of hazelnut praline and marzipan at the start, before the cocktail turns savoury with umami mushroom notes towards the finish!


 

A new addition to the menu, the House Faves section features popular drinks phased off previous menus such as the Tomato Is a Fruit, an agave variation on the tiki Queens Park Swizzle with Koch Elemental Espadin Mezcal, grapefruit & lime cordial, Benedictine, Oloroso Sherry, Campari and fresh citrus blend (S$26) and the Vieux Carré-inspired I Love Gold with Tokki Soju, Michter’s Bourbon, Cointreau, cacao blanc, Absinthe and Cinzano Rosso 1757 Vermouth (S$25++); agave classics such as a Paloma, Mezcal Negroni and Oaxacan Old Fashioned are also on offer. A continuation of the weekly milk punch, House Faves also features a rotating Milk Punch for a Cause (S$25++)with a portion of sales donated to local cat charities. 


Our Thoughts on Ode to Ada:

We truly ended the night on a high with Ode to Ada! Great balance of sweet and savoury flavors - which makes sense as we're told this is inspired by the idea of an apricot and cheese salad. This also had some really unexpected yet utterly delight finish, ending off with lingering notes of rose water and blackcurrant gummies.


With Singapore’s largest collection of agave spirits (boasting 200+ bottles for guests to try), Cat Bite Club rolled out agave and rice masterclasses earlier this year to invite imbibers for in-depth tastings to explore a diverse range of agave or rice distillates.

Each category encompasses an extensive variety of flavour profiles, production methods and applications for cocktails, all of which are discussed during the Agave La and Rice Academy tasting sessions. Guests can enjoy drinking and learning with technical notes, history and recipe recommendations for their chosen category, with four unique products chosen by Cat Bite Club’s expert team paired with light bites.
