Fans of both native birds and creative tipples have a new hangout spot in town now! This is no ordinary Jungle Bird.
Pan Pacific Singapore has introduced the new cocktail bar PLUME - celebrating the Panache of Singapore and the diversity therein. Paying homage to the vibrant, indigenous tropical birds of Singapore, the new bar PLUME has curated unique, elegant cocktails to pair alongside light bites.
The bar holds no punches in exuding the elegant, vibrant and lavish plumes of the jungle - the interior is decorated with shades of maroon and emerald, accentuated with gold. To bring home the jungle theme, monstera leaf walls mimic the luscious vegetation of the tropical rainforest.

The specially curated cocktails are concocted in collaboration with bar consultants as well as Compound Collective and PLUME’s head bartender Ong Jun Han. Inspired by 12 iconic birds of Singapore, each drink exhibits the personalities, eccentricities, plumes and even the diet of these birds.

For example, the Pink Necked Green Pigeon, is inspired by the commonly seen Pink Necked Green Pigeon that nests within tall trees in parks and nature reserves. The cocktail is a fruity concoction of fruits and fig leaves, closely mirroring the bird’s diet of figs, small fruits and tree buds.
More famous for its voice than its looks is the Asian Koel - with both males and females each making a distinctive call at daybreak and sunset. Nevertheless, the male and female Asian Koel both have unique feathers either in jet black or chestnut brown, and in PLUME, the Asian Koel takes the form of a Negroni - the classic bitter, herbaceous cocktail that is enhanced by a dash of sandalwood tree and green coffee tequila, giving the cocktail an alluring and earthy taste.
Perhaps the most unique of cocktails from this menu is the Banded Woodpecker - featuring green ant gin in its unconventional mix. The concoction is served with a mist of oak moss, bringing out a citrusy and musky perfume.

To elevate the experience further, snack on some Singaporean flavours curated by Thorsten Killian, Executive Sous Chef of Pan Pacific Singapore. Highlights include Bird Food, which consists of crisp and light lotus root chips topped with an in-house made salmon floss and served with a side of whipped onion cream that provides the perfect snack for a small group to chirp on.
For a bigger, bolder dish, the Perched Together is chicken rendang croquettes on a bed of crispy leeks, served with a creamy rice and egg purée. And to top it all off, the Pink Flamingos is a Pani Puri dish (a style of street snacks from India), featuring a crispy fried dough ball stuffed with tiger prawn tartare, rich shellfish foam, and topped with crispy cracker and wasabi nuts for added texture.
There is also the option to tuck away from the crowd, as PLUME has a separate bar, The Nest, available for private hire as well. PLUME is open daily from 5:00pm to 1:00am Sundays to Thursdays, and till 2:00am on Fridays and Saturdays, and reservation can be made here.
