Midleton's experimental lab, the Midleton Micro Distillery is readying their latest expression - the Method and Madness Single Pot Still Irish Whiskey Finished in Virgin Garryana Oak Barrels.
Garryana Oak comes from the North American Pacific Northwest, stretching from California to British Columbia, primarily harvested from Oregon's large reserves.

The oak, called Garry Oak for short, has become popular with American whiskey distillers as of late, for its rich and darker notes of molasses, black coffee, clove, toffee and wood smoke. It imbues whiskies with a richness and complexity, as well as refines its spiciness.
In terms of profile, it is closest to French Oak, with higher tannin levels than American Oak, but as a result is also more prone to leakage.
