Notes - Hououbiden Black Phoenix is 1 of the 3 in the Phoenix series and is also the entry level 🍶 of the series. I would think most people are very familiar with this 🍶 and it is very distinctive as the label is black with a stunning gold phoenix.

Made with Aiyama 🌾 polished to 55%, this 🍶 is smooth and aromatic in the mouth with lots of fruity aroma and clear expression of citrusy flavor. Gentle and soft as it slides down the throat leaving behind a subtle sourness resembling a ripe grapefruit. Medium sweetness and a gentle sourness helps to make this 🍶 easy to drink without making people feel too overwhelming.

I have always enjoyed 🍶 brewed with Omachi or Aiyama 🌾 as I feel that these 🍶 have more depth and layers as compared to the usual Yamadanishiki 🌾. With a light and gentle sourness, I’ll definitely pair this with seafood that is lightly flavored so as to enjoy the best of what this 🍶 has to offer.
