Overall - Tried a 300ml chill bottle yesterday while having dinner at a 🇯🇵 restaurant. First smell on the 👃 is light with a mixture of steam 🍚 and 🍏. Thought this is going to be a light tasting 🍶. However I was so wrong. First sip, you can taste the earthiness and mushroom flavor. Packed with lots of umami, it actually goes really well with the medium body and taste. Sweetness was medium dry which was expected from a 🍶that is earthy and laden with umami. Medium length makes it a well balanced 🍶. Despite being a 本酿造, this 🍶can easily qualify as a Ginjo grade 🍶. However this 🍶didn’t quite pair up with the sashimi and 🍣 set which I have ordered for dinner as the strong flavor of the 🍶kind of overpowered the freshness of the raw fish. I’m sure this 🍶would have fair better if pairing it with 🇯🇵 curry or a 🥩 sukiyaki.
