Sharaku 冩樂 純米酒 Junmai 60% Seimai Buai

Notes - This 🍶 is only pasteurized once which is uniquely different from the usual 🍶 which are pasteurized twice to eliminate off flavors. As such, I could find some distinct flavors from this 🍶. Sharp and crisp on the tongue with slight aroma of grapefruit and unripe 🥭 making the taste slightly sour. High acidity resulting into a bitter aftertaste in the palate.

This 🍶 was selected for dinner at @tanokesg and was also highly recommended by the waitress attending to me while I stood and stared at their sake selections. Having browsed the food menu before heading over, I understood that most of the food at Tanoke are grilled and drizzle with sauces and hence a Junmai shu should probably go well with the food. Indeed this Junmai shu goes really well with the miso cod 🐟, kanpachi carpaccio with truffle shavings and ikura and uni on toasted seaweed 🍙. The medium dry texture helps to ease off some of the sauces, making the dishes more balanced and enjoyable. It also compliments the carpaccio by adding just that little sourness flavor to the dish and giving it another level of taste. This is a nice bottle of Junmai shu which doesn’t display a lot of typical ricey aroma and good for people who wants to try Junmai shu minus the 🍚 flavor.

Overall, this is a good sake. 😀 😀 😀
