Notes - Hayashi Honten brewed their 🍶 with underground water from the Nagara River, one of Japan’s 3 cleanest rivers. The founder, Eiichi Hayashi, was a 🌾 farmer who loved 🍶 more than anyone else. With the desire to make the best tasting 🍶 from the 🌾 he grew himself, he established Hayashi Honten in 1920.

This 🍶 was part of a series call “Next Generation” and was created in 2020 and brewed with Hatsushimo 🌾 which is a rare variety only grown in Gifu and Mino regions. This 🍶 is call the Highball only Junmai which also means it is recommended to mix and drink cold with soda or tonic water. This 🍶 is also a blend of a 20yr old koshu aged in a cask barrel mixed with newly brewed 🍶. Rich and full in the mouth and laden with lots of rich nectar and sticky date aroma. Was expecting something much richer but it was pleasantly smooth yet with a subtle robustness to it. The longer it lingers in the mouth, you can feel the gentle sourness enveloping the inner cheeks. As it slides down the throat, a very gentle sweetness can be felt and then disappear into a slight bitter aftertaste.
