This cocktail comes from New Zealand, and it was the winner of the @Bacardi Legacy cocktail competition in 2015. I can see why. And look at the foam I created on this one!

1.5oz WHITE RUM (@bacardi)
1/2oz APEROL (@aperol)
1oz FRESH LEMON JUICE
1/2oz ORGEAT (@liquidalchemist)
EGG WHITE
3 drops PEYCHAUD’S BITTERS (@peychaudsaperitivo)

•Combine ingredients and dry shake to aerate egg
•Add large rock of ice and shake vigorously
•Double strain into chilled nick and nora
•Garnish the foam with bitters
