Butcher's Block Joins Elite Dom Pérignon Society To Offer Champagne-Paired Menus

 

 

Following the induction of Burnt Ends and Saint Pierre in 2023, the acclaimed wood-fire restaurant Butcher’s Block has just joined the exclusive Dom Pérignon Society. This makes Butcher’s Block only the third restaurant in Singapore to snag this honour.

The Dom Pérignon Society is all about celebrating the beautiful relationship between fine dining and those lovely Dom Pérignon vintages. It's a pretty selective club, with only 109 members across 18 countries, selected for their craft, creativity, authenticity and ability to create exquisite Chamapgne-paired menus.

 

 

Butcher’s Block is a restaurant with an avant-garde finesse of cooking with wood-fire. It is currently helmed by Chef de Cuisine Jordan Keao, who has illustrious experiences from top venues across the US and the renowned Burnt Ends in Singapore. He is committed to zero-waste and whole-animal butchery, and is passionate about sharing his Hawaiian heritage through his cooking.

 

 

To celebrate this event, Chef Keao has worked with Resident Sommelier Sam Lim to create the upcoming Summer IMUA menu (Imua is a Hawaiian phrase meaning "moving forward with strength and spirit”). It'll feature seasonal dishes with a Hawaiian twist, all paired with select Dom Pérignon vintages in a way that brings out the best qualities of both the dishes and bubbly.

 

 

As first course, three dishes - the Wagyu Beef Pipikaula, Butcher’s Block Farm Sorrel Pancake and Ahi Tuna Poke - will be paired with the Dom Pérignon Vintage 2013 that boasts a bright and refreshing versatility with notes of acidity which balances the different flavours.

The second course of Lomi Lomi is Chef Keao’s adaptation of traditional cold Hawaiian cured fish. Smokey with an intense profile, Chef and Sommelier selected Dom Pérignon Vintage 2012 for its nectarine and stone fruit accents that could elevate the notes of the smoked fish while adding a beautiful effervescent texture.

 

 

The Summer IMUA menu will be offered from 1st August 2024, and is priced at S$218++ per person. If you're feeling extra fancy, opt for the Dom Pérignon Experience, which includes 2 glasses of Dom Pérignon and 3 glasses of premium wines for S$408++. Or, if you just want a sip of the good stuff, you can order Dom Pérignon by the glass for S$98++.
