Fans of the Republic Bar at The Ritz-Carlton, Millenia Singapore can look forward to a revamped menu that includes 16 new cocktails.

Unveiled on 23 July, the new lineup draws inspiration from all that's memorable in the 1960s, paying homage to the key turning points that came to define the generation. The menu will be split into four concepts: icons, media, aesthetics, and innovation, with each concept including four cocktails.

There will also be a food menu that is said to take inspiration from Singapore's humble beginnings of the 60s, with particular focus on the melting-pot of cuisines brought forth by immigration.

Icons celebrates the legacy of luminaries such as Singapore’s founding father
Lee Kuan Yew or the King of Rock Elvis Presley. For example, Founding Father pays homage to Lee Kuan Yew’s powerful leadership and enduring
legacy using rum and sparkling wine garnished with Singapore’s national flower.

The Greatest

The Greatest honours Muhammad Ali's iconic boxing legacy and charisma in a bold twist on the Boulevardier - this time presented slightly sweeter with honey while garnished with a chocolate butterfly, a playful reference to his iconic tagline “float like a butterfly, sting like a bee”.

The Woman of the Year

Media works toward capturing the vibrant media scene in the 1060s during a period rife with increasing media coverage that permeated through the facets of everyday life. Such cocktails to represent this section include the Woman of the Year, which uses gin, sparkling wine and ginger chili honey to honour the pioneering spirit of Singapore’s first women’s magazine: Her World Magazine.

Aesthetics honors the psychedelic movement of the 60s that evolved from the geometric stylists of the 1950s. Fittingly, Psychedelia is a cocktail made with components such as dessert wine, maraschino, lychee liqueur, lavender bitters and olive oil, and stands to represents the vibrant experimentalism of the period.

Innovation is the last on the list, harkening back to a period marked by creation and pioneering advances in various fields. Much like NASA's titular Gemini program, the Gemini is a twist on a classic gin and tonic, now infused with orange and garnished with a wedge of orange jelly.
