Paloma with Grapefruit Juice

I think tequila is a misunderstood spirit, often associated with regret from nights where that one friend thought tequila shots would be a great idea (I *may* have been that friend a couple of times). But if imbibed responsibly – and provided it's quality stuff, of course – agave spirits bring a grassy, mineral depth to cocktails that can be entirely enjoyable, if not incredible.

A recent video by @theeducatedbarfly got me thinking about this wonderful, modern paloma that I enjoy MUCH more than the traditional grapefruit soda version. Using grapefruit juice makes for a more tart, refreshing drink with some body to it, while tequila still manages to be the star of the show. I'm not ashamed to admit my grapefruit juice comes out of a carton, but for those patient enough to squeeze a fresh grapefruit, that'd probably be even better.

For anyone who's a bit iffy about tequila but is open to changing their mind, this is a fantastic starting point. After all, what's the worst a drink literally named "dove" could do, eh? 🕊️

Paloma
· 1.5 oz blanco tequila
· 1 oz grapefruit juice
· 0.75 oz lime juice
· 0.75 oz simple syrup (I prefer dropping it to 0.5 oz)
· 2 drops saline solution
· Soda water to top (about 1 oz)
· Fresh grapefruit for garnish/post-drink snack

Shake everything except the soda with ice. Pour a little soda into the glass, then top with the contents of the shaker. Garnish with fresh grapefruit, kick back, and make the most of a hot afternoon.
